It works as a quick lunch or a light dinner, and the components keep well separately, so you can prep the chicken ahead and assemble in minutes.
Ingredients
- 1 lb chicken breast
- 4 cups romaine lettuce, chopped
- 1/3 cup Caesar dressing
- 1 cup croutons
- 1/4 cup parmesan, shaved or grated
- Salt and pepper, to taste
Instructions
- Season the chicken with salt and pepper.
- Grill or pan-cook the chicken over medium-high heat, about 5–6 minutes per side, until cooked through (165°F / 74°C).
- Let the chicken rest for 5 minutes, then slice it across the grain.
- Chop the romaine and place it in a large bowl.
- Toss the lettuce with the Caesar dressing until evenly coated.
- Top with the sliced chicken, croutons, and parmesan, then serve.

Tips
- Let the chicken rest before slicing so the juices stay in the meat instead of running out.
