A chicken Caesar is the salad that actually fills you up. Crisp romaine, a creamy garlicky dressing, salty parmesan, crunchy croutons, and warm sliced chicken. It hits every texture at once.

It works as a quick lunch or a light dinner, and the components keep well separately, so you can prep the chicken ahead and assemble in minutes.

Ingredients

Instructions

  1. Season the chicken with salt and pepper.
  2. Grill or pan-cook the chicken over medium-high heat, about 5–6 minutes per side, until cooked through (165°F / 74°C).
  3. Let the chicken rest for 5 minutes, then slice it across the grain.
  4. Chop the romaine and place it in a large bowl.
  5. Toss the lettuce with the Caesar dressing until evenly coated.
  6. Top with the sliced chicken, croutons, and parmesan, then serve.

Tips

  • Let the chicken rest before slicing so the juices stay in the meat instead of running out.
  • Dress the lettuce just before serving; dressed too early and the leaves go limp.
  • Add the dressing a little at a time; it's easy to overdo and you can always add more.
