Turkey Avocado Sandwich
A fresh, satisfying turkey and avocado sandwich with crisp lettuce. No cooking, ten minutes, lunch sorted.
Some lunches don’t need a recipe so much as a good combination, and turkey with avocado is one of the best. Creamy avocado stands in for half the mayo, the turkey keeps it filling, and the lettuce adds crunch.
It comes together in the time it takes the toaster to pop. Build it on whatever bread you’ve got: sourdough, whole grain, or a soft roll all work.
Ingredients
- 4 slices bread
- 8 oz turkey slices
- 1 avocado
- 2 tbsp mayonnaise
- 2 lettuce leaves
- Salt and pepper, to taste
Instructions
- Toast the bread if you like a little crunch.
- Halve the avocado, scoop it out, and mash it with a pinch of salt and pepper.
- Spread mayonnaise on two slices of bread and the mashed avocado on the other two.
- Layer the turkey and lettuce onto the avocado side.
- Close the sandwiches, press gently, slice, and serve.

Tips
- Toss the cut avocado with a little lemon or lime juice if you're prepping ahead; it keeps it from browning.
